PEAR PEACH TOMATO "Ketchup"



Ingredients



2 lbs tomatoes (peeled)

2 peaches (peeled and pitted)

2 lbs ripe pears (peeled and cored)

2 large green peppers (seeded and chopped)

2 cups brown sugar (firmly packed)

1 cup white vinegar

2 teaspoons sea salt

1 teaspoon ground ginger

1 teaspoon dry mustard

3 dashes Tabasco sauce (or to taste)

1 (4 ounce) jar diced pimentos



Directions:



Dice the tomatoes, peaches and pears; you should have about 8 cups total.



Place the peaches and pears in a 5 quart pot along with the peppers, sugar, vinegar, salt, ginger, mustard and Tabasco.



Bring to a boil over high heat. Stir in the tomatoes, reduce the heat to medium and boil gently, uncovered and stirring often, until mixture thickens slightly. About 1 hour. Stir in the pimentos.



Boil gently, uncovered and stirring often until thickened. About 10-15 minutes. Put into prepared canning jars and store in a cool place.
Reply:The tabasco is "to taste" --- so dont add any. Add a little more brown sugar if you like it sweeter and a touch more vinegar if you want it more tart. Report It
Reply:I use 10 tomatoes, 3 peaches, 3 apples, 3 pears, 1 green pepper, 1 onion, 2 1/2 cups sugar, 1 cup vinegar, 1 TB pickling spice. Peel skins from apples and pears, pare, cut tomatoes--If seeds are a problem, clean from tomato, while pressing tomatoes through collander (to press out some of the juice--I use the juice in a beer while I'm wating for the catsup to cook)--cook covered until done--cut everything to salsa size or grind before cooking..
