PEAR CHOW RELISH

Yield: 8 to 10 quarts. 12 lg. peppers (1/2 green, 1/2 red), 1 qt. 8 onions, peeled (1 qt.) 1 qt. vinegar 4 c. sugar (1 qt.) 1 tbsp. turmeric 1 tbsp. mustard seed 1 tbsp. celery seed 2 or 3 red hot peppers 1 1/2 tbsp. salt (or to taste)

Peel pears and onions. Grind in food chopper. Seed peppers and put through food chopper. Put whole hot pepper through chopper at end. (May vary depending on how hot you like relish.) Put all chopped ingredients in large kettle with vinegar, sugar, spices and salt. Cook slowly over medium heat about 30 to 40 minutes. Pack in hot jars and seal.

This is an excellent all purpose relish. It can be made as hot as you wish, depending on amount of hot peppers used. If pears aren't available, firm (hard) apples can be substituted. Can be put in smaller jars and given as a gift.
