Good Question .... How does an orange tree know to make oranges, and Pear tree know to make pears....?

inanimite objects, living or non-living, do not "know" anything. the genes that they are given are what make them create what they need to create. much like say, your mom had blue eyes, and those genes were passed on to you. your body is now able to develop blue eyes for you during the gestation period, much like a plant's gestation period.
