Yield: 4 Servings
4 1/2 oz Round Brie cheese
Coarsely cracked black

7 oz Baby pear tomatoes (red and

Fresh herb sprigs savory, dill, or a combination of them Sliced French
Bread
Generously line a 9 inch microwave-safe pie plate or quiche dish with
fresh herb sprigs. Place cheese over herbs in dish. Using the tip of
a paring knife, score top of the cheese in a diamond pattern.
Generously top cheese with black pepper. Micro-cook, uncovered, on
100% power (high) 1-1/2 to 2 minutes or till cheese just starts to
melt. Arrange tomatoes around cheese. Sprinkle cheese and tomatoes
with snipped herbs. Cook on high 1 minutes more or till tomatoes are
warm. Cut cheese into wedges; serve with tomatoes and bread. Makes 4
to 6 appetizer servings.

3 large tomatoes
1 pound Buffalo mozzarella
8–10 fresh Basil leaves
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra virgin olive oil
Cut the tomatoes into ? inch slices. Cut the Buffalo mozzarella into 1/4 –1/2inch slices. Tear the basil leaves coarsely by hand, or slice them thinly to form a chiffonade.
Arrange the tomatoes and mozzarella in alternating overlapping slices on a large platter.Sprinkle with salt and pepper. Pour the olive oil over the salad and scatter basil on top. Let the salad sit at room temperature for 20 minutes to allow the flavors to meld.
Reply:Basically making a tomato salad or homemade salsa. If you have too many still then you might want to can them or freeze them.
I freeze extra tomatoes if I don't have enough to can. I remove the skin by putting them in boiling water for a bit. (I use a knife to prick a couple holes in the skin before placing them in the water) After I peel the skin I put them in freezer bags. I use them in chili and make salsa with it during the winter.

Cook tomatoes 45 minutes. Add sugar, lemon, and ginger. Cook until thick and smooth. Pour into sterilized jars to within 1/2 inch of top. Put on cap, screw band firmly tight. Process in Boiling Water Bath 10 minutes. Yield: 8 eight oz. jars.

TOMATO MARMALADE
3 quarts tomatoes (12 cups, after cutting)
2 oranges
2 lemons
10 cups sugar
2 tablespoons whole cloves
6 tablespoons broken cinnamon stick
REMOVE peel from tomatoes and cut in small pieces. Slice oranges and lemons very thin and quarter the slices. Pour off juice from the tomatoes. Add sugar. Stir until the sugar is dissolved. Add oranges, lemons, and spices which have been ties loosely in cheesecloth bag. Place mixture over high heat and boil rapidly, stirring often. Cook until clear and thick (about 50 minutes). Pour into sterilized jars to within 1/2 inch of top. Put on cap, screw band firmly tight. Process in Boiling Water Bath 10 minutes. Yield: 8 eight oz. jars.
TOMATO PUREE
1 onion
3 stalks celery
3 sweet peppers
12 cups tomatoes (quartered)
SIMMER all ingredients until soft. Press through sieve, season with salt and pepper. Fill jars to within 1/2 inch of top. Put on cap, screw band firmly tight. Yield: 4 pints. Process in Boiling Water Bath 45 minutes.
INGREDIENTS
1 pint cherry tomatoes, halved
1 pint yellow pear tomatoes, halved
1/4 cup chopped green onions
1 clove garlic, minced
1/4 cup chopped fresh basil
1/4 cup chopped cilantro
freshly ground black pepper to taste
ground red pepper to taste
salt to taste
DIRECTIONS
In a bowl, toss the cherry tomatoes, yellow pear tomatoes, green onions, garlic, basil, cilantro, black pepper, red pepper, and salt. Refrigerate 30 minutes and toss again before serving.

Reply:Canning is a good start, dehydrate them or you could make tomatoe past and freeze it. Then there's my favorite...Sauce!
Reply:My fave is making a salad with cukes, and red onions. take the Toms and cut them in wedges because they'll tend to get mushy. Slice the cukes into 1/4 inch slices peel some skin off first. cut the onions into bite size pieces. A little salt %26amp; pepper, A pinch of oregano, a pinch of fresh garlic or powder, a pinch of fresh finely chopped parsley or flakes. Drizzle it with some olive oil and vinegar and toss very carefully. chill for 15 - 30 minutes good to go with a dinner or by itself with some nice garlic rosemary bread. I serve it at my restaurant. Some times I add a little Fresh buffalo mozzerella to the salad.

FRESH TOMATO CASSEROLE
This recipe does not have specific amounts. Use your own discretion. First layer: sliced fresh tomatoes. Second layer: sliced onions separated into rings. Third layer: sliced Swiss cheese.
Sprinkle with Parmesan cheese and Italian bread crumbs. Repeat first, second and third layers until you have the desired amount. Top the casserole with bread crumbs that have been mixed with melted butter. Bake at 350 degrees for 45 minutes.
