After you have removed the glochids (needles) you can eat the fruit fresh, or prepare it in several ways. (Juice, jelly, salad dressing, etc.)

Peel back the skin first.
Reply:I think this is what you're talking about, but I've never seen a cactus pear so..........
Reply:You peel it like an orange. Actually for your project, I'ld use an artichoke (Steam, pull off petals and scrape soft stuff off with teeth, then peel away the inner fuzzy stuff and go for the heart. dip in melted butter and or mayonaiise for extra flavor) Every time I buy them I have to explain what it is and what you do with it to the cashier and everyone else around who asks...more for me...I love them.
Reply:You need to soak the cactus pear over night in a bucket of water, this will get rid of most of the prickles on it. (DO NOT EAT IT WITH THE SKIN ON!!! it is very unpleasant)

Wearing cloves, take them out of the water. Cut of the top and the bottom, and slice down one side. You should then be able to peel the skin away from the flesh by opening them where you sliced it down the side. the flesh should be remove easily by pulling the skin backwards and around.

They are best served chilled, whole or sliced. they can also be made into jam.
